A super quick and easy chunky guacamole recipe.
It will rejoice you and some extra heart-healthy monounsaturated fats to your snack.
2 very ripe avocados, peeled and roughly chopped
1 tomato, deseeded and finely chopped
½ chilli, deseeded and finely chopped
½ cup coriander, roughly chopped
Juice of half a lemon
Drizzle of Pure South Press Avocado Oil
Salt and pepper to taste
Place all the ingredients into a bowl. Using a fork, mash all the ingredients together lightly. The desired texture is slightly chunky, with enough of a paste forming so that the herbs and spices have been mixed through thoroughly. Serve as a snack with an extra drizzle of avocado oil, along with tortilla or baked pita chips; or spoon over your favourite Mexican dish.
